Anzac Biscuits

This is my mother's take on the ubiquitous ANZAC biscuit.

Ingredients

  • 120 g butter
  • 1 tbsp golden syrup
  • 120 g sugar
  • 120 g flour
  • 120 g rolled oats
  • 120 g desiccated coconut
  • 1 tsp baking powder

Instructions

  • Heat the oven to 160° C (325° F)
  • Melt butter and golden syrup together and add sugar to dissolve.
    120 g butter, 1 tbsp golden syrup, 120 g sugar
  • Mix with flour, rolled oats. coconut and baking powder.
    120 g flour, 120 g rolled oats, 120 g desiccated coconut, 1 tsp baking powder
  • Roll into small balls and flatten onto a greased oven tray.
  • Bake for 15 minutes
  • Turn onto a rack to cool and store in an airtight container.
