Kimberly’s Quinoa Stuffing

This is a dead easy gluten free stuffing for your roast chicken.

Ingredients

  • 1.5 Cups Quinoa
  • 2.25 Cups Water
  • 2 Tbsp Olive oil
  • 1 tsp salt
  • .5 Cup Green herbs Dill, parsley, coriander sage
  • 1 Lemon Rind and juice
  • .5 Onion Finely diced
  • 1 handful Dried currants
  • 1 handful Dried cranberries
  • 1 handful Pine nuts

Instructions

  • Cook the quinoa,salt and oil, in the water in a pot with a lid. Simmer very gently for ten minutes then turn the heat of and leave it for ten minutes.
    1.5 Cups Quinoa, 2.25 Cups Water, 2 Tbsp Olive oil, 1 tsp salt
  • Put the quinoa in a large bowl and gently mix-in the remaining ingredients.
    .5 Cup Green herbs, 1 Lemon, .5 Onion, 1 handful Dried currants, 1 handful Dried cranberries, 1 handful Pine nuts
